One-minute Mango, Papaya & Strawberry Ice Cream

As I was walking by the frozen fruit section in the grocery store, my mind drifted toward the One-minute Berry Ice Cream by Jamie Oliver that I made awhile back.  I was going to grab a mixed-berry bag when my eyes landed on the Mango, Papaya & Strawberries bags.  So I thought, hmmm, why not try something different?  So I grabbed one of the Mango, Papaya & Strawberries bag, headed back to the produce section to get the mint, as well as to the dairy section to get the plain Greek yogurt

The thing I like about this dessert, you can whip it up in no time.  You just need the frozen fruits, plain Greek yogurt, honey, and mint.  That’s it!

And basically, I dropped everything into the food processor.  Plain Greek yogurt, fruits, mint leaves, and honey.

Pushed the pulse button or on button, and let the food processor have at it.  I like the almost smoothie-like consistency, but with little bits of fruit chunks in it.

I put it back into the yoghurt container…

Scooped some into a ramekin, dished it up with mint leaves.  Voila!  Dessert in less than 2 minutes!

One Minute Mango, Papaya & Strawberry Ice Cream

Recipe modified from Jamie Oliver


1 package of frozen fruits

3 – 4 tablespoon of honey

Fresh mint leaves

A quart size of plain Greek yogurt


Put all ingredients into a food processor.  Pulse until all fruits are mixed in with the yoghurt and reach desire consistency.  Taste, add more honey if necessary.  Serve immediately.

Note: this can be frozen.
